Abstract
La presente investigación tiene como objetivo determinar los factores asociados a la calidad microbiológica de los alimentos cárnicos expendidos en el mercado La Moderna de Chilca, Huancayo; Con estudio descriptivo transversal en 20 puestos de venta de carne, con muestreo censal. Resultados: Se identificaron deficiencias en prácticas higiénico-sanitarias, control de vectores y mantenimiento de utensilios, así como una limitada traducción de la capacitación en buenas prácticas. Estas condiciones favorecieron una alta frecuencia de aislamiento microbiológico, destacando Escherichia coli (75 %) y Yersinia spp. (20 %), lo que evidencia fallas estructurales en la gestión de inocuidad alimentaria en el mercado La Moderna. Conclusión: La carne en La Moderna muestra deficiencias en bioseguridad y manipulación, afectando la inocuidad. Es necesario implementar protocolos y mejorar estructuras.
This research aims to determine the factors associated with the microbiological quality of meat products sold at the La Moderna market in Chilca, Huancayo. A cross-sectional descriptive study was conducted at 20 meat stalls using census sampling. Results: Deficiencies were identified in hygiene and sanitation practices, vector control, and utensil maintenance, as well as limited implementation of training in good practices. These conditions contributed to a high frequency of microbiological isolation, with Escherichia coli (75%) and Yersinia spp. (20%) being the most prevalent, highlighting structural flaws in food safety management at the La Moderna market. Conclusion: Meat at La Moderna exhibits deficiencies in biosecurity and handling, affecting its safety. It is necessary to implement protocols and improve infrastructure.
