Abstract
La investigación tuvo como objetivo determinar la relación entre la calidad microbiológica y las prácticas de manipulación en quesos frescos artesanales del Mercado Unicachi, Comas, 2026, mediante un estudio básico, cuantitativo, correlacional, no experimental y transversal, con ocho puestos y ocho muestras. Se realizó análisis microbiológico y observación de las prácticas, encontrándose 37,5 % de buenas, 25 % regulares y 37,5 % malas; el 100 % de los quesos fue apto, sin presencia de Listeria monocytogenes ni Salmonella spp. Se concluyó que los quesos presentaron adecuada calidad microbiológica, aunque persistieron prácticas inadecuadas en algunos puestos, sin establecerse asociación estadística.
The study aimed to determine the relationship between microbiological quality and handling practices for artisanal fresh cheeses at the Unicachi Market in Comas (2026), using a basic, quantitative, correlational, non-experimental, and cross-sectional design involving eight stalls and eight samples. Microbiological analysis and observation of practices were conducted, revealing that 37.5% of practices were good, 25% were fair, and 37.5% were poor; 100% of the cheeses were fit for consumption, with no presence of *Listeria monocytogenes* or *Salmonella* spp. It was concluded that the cheeses exhibited adequate microbiological quality, although inadequate practices persisted at some stalls, with no statistical association established.
