Abstract
The results obtained showed a decrease in the content of bioactive compounds and in the antioxidant activity of fresh camu camu (Myrciaria dubia) pulp following the spray-drying process. The treatment with 30% maltodextrin yielded the highest values for vitamin C (1,668.10 mg AA/100 g w.b.), total phenols (792.77 mg GAE/100 g w.b.), total flavonoids (325.50 mg GAE/100 g w.b.), anthocyanins (31.70 mg C3G/100 g), total carotenoids (2.93 mg carotenes/100 g w.b.), and DPPH antioxidant activity (18.05 mmol TE/100 g w.b.). However, the antioxidant activity determined by the ABTS method reached its highest value with 20% maltodextrin (22.03 mmol TEAC/100 g w.b.), compared to 20.80 and 18.05 mmol TEAC/100 g w.b. obtained with 10% and 30% maltodextrin, respectively.
